Perfect Pan Seared Fish

No Fail Recipe

Preheat oven to 400 degrees
Season one side of any good grilling fish (Salmon, Halibut, Cod, Snapper, etc)
Optional Seasoning: (lightly season with additional brown sugar)
Let seasoned fish rest for a few minutes
Preheat ovenproof skillet on medium high
Pan sear seasoned side of fish for about 2 minutes
Turn fish and finish in oven for 4 to 6 minutes depending on thickness of fish
Remove to a serving plate and serve right away
Garnish with a slice of lemon

Thin cut fish filet: Cook both sides quickly in a good skillet

Outdoor Grilling: Preheat the grill to medium heat. Let seasoned fish rest for a few minutes. Grill seasoned side over direct medium heat for one minute. Turn and finish over indirect medium heat for about 8 to 10 minutes. Times may vary due to thickness of fish. Don't overcook. Juicy, tender and serves beautifully every time.
