Pan Seared Steak

Season one side of your favorite grilling steak with Smoky Cowboy Rub
Let steak rest for at least 15 minutes or up to 24 hours.
Let steak come to room temperature before cooking
Preheat your oven to 400 degrees
Preheat an ovenproof skillet on medium high heat
Lightly coat seasoned side of steak with a high heat cooking oil like canola

Pan sear the seasoned side until browned (don't burn the spices)
Turn the steak and lightly sear the other side
Finish cooking in the oven to desired doneness
Remove to a serving dish and let rest for at least 5 minutes

Optional Heat: Add additional Cayenne, Chipotle or other hot chili to taste

Outdoor Grilling: Cook the first side over direct heat. Finish over indirect heat.
